Our Chef: Sylvain Etievant
Our Executive Chef Sylvain Etiévant came directly from the Principality of Monaco to join our Bolinas Restaurant in 2020.
Sylvain spent a big part of his career in the Sociéte des Bains de Mer, specifically at the Hotel de Paris.
Highly trained by Mario Muratore and Alain Ducasse, he worked as Executive Chef at the restaurant "Bar & Boeuf" at the Sporting Monte Carlo.
His Career
In his career, he was part of the team at the Michelin-starred restaurant "The Grill" at the Hotel de Paris, he then joined La Chaumiére followed by the Casterlroc, right next to the Palace of Monaco.
His passion about vegetarian and vegan cuisine brought him to the L'inattendu(e), a vegan and organic spot in the principality.
